Hey folks – how are you doing? I hope the first week of September (say what?!) has been treating you well. And since the weekend is approaching (yaaay!), let’s enjoy something ultra delicious. Preferably, boozy.
And while warm days are still here, I am going to squeeze another perfectly summer and refreshing recipe. However, you can enjoy this rich shake any time of the year, if you ask me.
Irish Cream Milkshake
This Irish Cream Milkshake is ridiculously easy to make, yet its flavour is nothing short of amazing! I mean, vanilla ice cream, vanilla, and Irish cream liquor – what not to like about this? It’s super thick, rich, and simply irresistible. Naturally, this milkshake is quite sweet, so when picking your ice cream, be sure to grab the one with less sugar. You can play with ice cream flavours, too – I think chocolate and coffee would be best choices. Also, the addition of dark chocolate sauce is optional, but it nicely balances out the sweetness.
And, of course, you can be creative by picking your favourite liquor. While Irish cream (e.g., Baileys, Carolans Irish Cream, and other brands) would be my first choice, you can go with something different. For example, we tried this with Maple Cream – a Canadian liquor made with Amaretto, and it was amazing! If using Baileys, besides the original flavour, think something special like espresso, salted caramel, Tiramisu, Pumpkin Spice, and other variations. But technically, other cream liquors would work well in this recipe.

Irish Cream Milkshake

Ingredients
- Chocolate Drizzle (Optional):
35-50 gr. dark or extra dark chocolate (70% or more), finely chopped
1/4 cup (60 ml.) light cream (5 or 10%)
- Milkshake:
1 pint (about 400 gr. or 2Â cups)Â vanilla ice cream
1/3 cup (80 ml.) Irish Cream liquor of your choice e.g., BaileysÂ
1/4 cup (60 ml.) milk, optional
1/2 tsp. vanilla extract
Directions
- To make the chocolate drizzle, add the cream and chocolate to a small saucepan and place over low heat, stirring occasionally, until melted and combined. Remove from heat and let the sauce cool, 15-20 minutes.
- In the meantime, let the ice cream sit out at room temperature until starting to soften, 10 to 15 minutes, for easy blending. Also, chill the glasses in the fridge or even freezer.
- Place in the cup of your blender the Irish cream, vanilla extract, and soften ice cream. Blend until the milkshake is smooth and pourable, about 30-40 seconds. From this point, if it is too thick, you can add the milk – or probably even another splash of Irish Cream. Whizz up a few seconds longer.
- Divide the milkshake between the chilled glasses, drizzle with the cool chocolate sauce, and enjoy right away!
